Ingredients:

6 RedHat Mini Cucumbers
2 grated RedHat Bell Peppers
1 box filo pastry
1/4 cup of butter
2 cups of bean sprouts
Your favorite Peanut Sauce
Fresh cilantro

Directions:

Slice the RedHat Mini Cucumbers lengthwise into quarters. On a flat surface lay a sheet of filo down and brush with melted butter, fold in thirds lengthwise. Cut filo in pieces into thirds.

Place a RedHat Mini Cucumber slice onto a cut filo piece, add a few bean sprouts and some grated RedHat Bell Pepper. Sprinkle with salt & pepper and add a sprig of cilantro. Brush edge of filo with butter to ensure it will seal and roll filo. Place the roll onto a parchment covered baking sheet.

Bake at 177 °C (350 °F) for 15 minutes or until filo is golden brown. Serve with your favourite peanut sauce for dipping.
