Prosciutto & Mini Cucumber Sandwiches

Ingredients:
1 packet of Ultimate Garlic Bruschetta Seasoning Mix
500 g of RedHat Roma Tomatoes, finely diced
1 medium onion, finely diced
4 tsp. cilantro or parsley, chopped
2 tbsp. olive oil
Fresh ground salt & pepper to taste
Fresh baguette for serving
Directions:
1. Mix all ingredients in a bowl and let sit for 30 minutes for best flavor
2. Cut thick slices of baguette. For optimum texture & taste, toast bread thoroughly before garnishing
3. Season to taste and serve on bread slices
4. Enjoy
