Mini Cuc and Feta Salad

Piquante Bell Peppers

Ingredients:

3 cups of diced RedHat Cocktail Tomatoes
1 cup of onion, finely diced
½ cup of chopped cilantro
3 garlic cloves, diced
1 teaspoon of salt
3 tablespoon of olive oil
1 whole serrano pepper, finely chopped
Juice from 1 lime
Fresh ground pepper, to taste

Directions:

Combine ingredients, and let sit at least 15 minutes before serving. Add fresh ground pepper to taste.
