Mini Cuc and Feta Salad

Ingredients:
3 RedHat Long English Cucumbers
1/2 cup crumbled Greek feta cheese
1 tablespoon mayonnaise
1 teaspoon minced fresh mint
1/2 teaspoon dried dill weed, or slightly more
1/4 teaspoon sea salt
1/4 teaspoon ground pepper
1 tablespoon minced fresh parsley
Directions:
Cut chilled cucumbers in half lengthwise. Scoop out seeds and centers. Mash together feta with mayonnaise, mint, dill, salt and pepper until well combined. Stuff cucumbers with cheese mixture. Sprinkle with parsley and refrigerate to set.
